BaanThai Authentic Thai Cuisine using the Authenticity Model of Traditional Food Specialties

Abstract:

The purpose of this study was to determine the perception of the customers toward the authenticity of the dishes being served at BaanThai Authentic Thai Cuisine in Los, Baños Laguna. Specifically, the study determined: 1) the origin of the dishes of BaanThai Authentic Thai Cuisine; 2) the subjective factors, which affect the purchase intention of the customers; and 3) the ways the subjective factors affect the purchase intention of the customers. It used a descriptive design, which was qualitative in nature. Data were gathered through an interview with the owner and the customers. The results of the study revealed that the dishes of BaanThai Authentic Thai Cuisine came from the Northeastern region of Thailand known as Isan region. The owner’s wife originated from the same region, and with familiarity with and exposure to this authentic cuisine, she does the cooking of the Thai dishes in the restaurant. The main reason why customers dine at BaanThai Authentic Thai Cuisine was that they wanted to have an authentic dining experience and to try something new. Ambience or the atmosphere adds up to the authenticity, which makes the customer feel that they have an authentic dining experience. Though there are modifications and inconsistency in terms of the quality of food, the customers continue to dine at BaanThai because it serves tasty and affordable dishes.
