FISH LONGGANISA: A COMPARATIVE ANALYSIS

Abstract:

Innovation is a marketing strategy to help producers promote new products and break away from traditional practices. This study explored the potential of tilapia (Oreochromis Niloticus), galunggong (Decapterus Macarellus) and maya-maya (Lutjanos Malabaricus) as alternative to pork longganisa. Sensory evaluation involving 15 panelists were undertaken to determine the optimal longganisa formulation and its acceptability. Appropriate statistical tools were also employed to determine the cost and profitability of the samples under study.Based from the data drawn from the respondents, pork longganisa is the most acceptable in all aspects used in the sensory evaluation. However, from among the fish variety choices, Treatment 2(tilapia) is the best choice, next to pork longganisa. It also came out that there is no significant relationship between the Return of Investment (ROI) and acceptability of longganisa.
